Greek DinnerCooking & FoodImmerse yourself in the flavors of Greece as we prepare a delicious, multi-course feast. You’ll start with the beloved national soup, Soupa Avgolemono - a comforting lemon chicken soup. The menu also features a classic flaming cheese appetizer, saganaki, along with a flavorful eggplant starter. For the main course, explore a unique twist on a traditional favorite with zucchini and ground lamb moussaka. You’ll also learn to create delicate spinach-filled phyllo pastries, spanakopita, and finish on a sweet note with karidopita, a rich walnut cake soaked in fragrant orange syrup. Four Famous Ethnic CookiesCooking & FoodLearn to create the rolled Norwegian cookie, Krumkakes are made with cream, butter and cinnamon or sometimes flavored with vanilla. Italian Pizzelles are a flat, anise-flavored cookie that may also be flavored with vanilla. Swedish Sandbakkelse are chewy and almond flavored and baked in tiny tins to resemble tarts. Finally, we will master deep fried Rosettes - fragile, paper thin Scandinavian delicacies dusted with confectioners sugar. You will receive great recipes along with many tips and techniques that will make your baking a success! Bring containers so you can get your creations safely home. Traditional Southern CookingCooking & FoodExplore the rich, layered flavors of the Deep South in this hands-on cooking class. Shaped by influences from French, German, and Spanish settlers—along with West African, Cajun, and Caribbean traditions—Southern cuisine brings together bold ingredients and time-honored techniques. In this memorable class, you’ll prepare a delicious spread featuring crab dip, classic cheese straws, gumbo, jambalaya, red beans and rice, buttermilk biscuits, cheese grits, pecan pralines, and traditional bread pudding with bourbon sauce. LefseCooking & FoodIf you are Norwegian and missed recording Grandma's lefse recipe, tips, and techniques, this is the class for you! Even if you aren't Norwegian, you'll love this delicious treat! Learn how to make the dough and bake, store, and serve lefse - with a bonus bit of history and humor, too. We will make an authentic recipe with real potatoes and a modern version with instant potatoes. At the end of class, you can sample your fresh creations with traditional fillings. Bring a container so you can take home finished lefse and dough to bake and share. Registration for all class sessions closes 3 days before the start date.
